Parchmentizing: Greaseproof paper is made by subjecting the paper to a process called parchmentizing. In this process, the paper is treated with sulfuric acid or sulfuric acid combined with other chemicals. The acid treatment alters the paper's structure, making it more resistant to the penetration of grease and oil.
Dense structure: The parchmentizing process leads to the formation of a denser structure in the paper. The acid treatment causes the fibers in the paper to tighten and bond together, creating a more tightly packed network. This denser structure reduces the paper's porosity, making it less permeable to grease and oil.
Surface treatment: Greaseproof paper often undergoes additional surface treatments to enhance its resistance to grease and oil. For example, a thin coating of silicone or a food-grade wax may be applied to the surface of the paper. These coatings create a barrier that repels or resists the absorption of grease and oil, preventing them from saturating the paper.
High heat resistance: Greaseproof paper is designed to withstand high temperatures without melting or degrading. This property is especially important for baking and cooking applications. The paper's heat resistance helps maintain its structural integrity, preventing grease and oil from seeping through even when exposed to high heat.
It's important to note that while greaseproof paper is resistant to grease and oil, it is not completely impermeable.
